Quick and Easy Dessert

Some times you just want a sweet dessert, ya know? Ya know.

I made some chocolate covered strawberries that were delightful, and they are a treat that’s even better the next day if you can wait.

Chocolate Covered Strawberries



Chocolate (chips, bar, whatever you got that’s solid.. literally.) I used about 1/3 cup, the bottom of the bag

Coconut Oil (I used about 2 TBS)

Melt the Chocolate in either a double boiler or microwave. If using a microwave, check and stir every 20-30 seconds. Add the coconut oil and mix well. Dip the strawberries and coat, laying them on parchment to set. I dipped the strawberries twice, because I LOVE having a good layer of chocolate. Eat immediately or put in the fridge and enjoy later. Super easy, quick, and satisfying.

Note: I made this low carb by using Lily’s chocolate.
